"The first year we sold 2000 pints, so really really tiny," Barry says. "So Shahnaz and I, we didn't have any employees for the first years. So we did everything. Make ice cream at night, deliver during the way, make ice cream at night..."


I hadn't had frozen custard until I moved here and went to the late, great Old School Frozen Custard on Pike. I loved it, even though I never knew exactly what makes frozen custard different from its ice cream counterpart.


Ice cream is essentially cream, milk, and sugar. Now add what Hill refers to as "literal buckets and buckets of eggs" and cut down on some of the cream, and you have frozen custard. The result is softer and creamier than ice cream, but richer than soft serve.

You feel obliged to be a good host and serve them dessert, but not so much that you want to serve them your best stuff. No, you want to get in one final spur before bed, and make sure their lingering thoughts of were how you ever so politely screwed them in the ass.

Bettinger and his wife built a small farm next to the ice cream factory that grows ingredients for their ice cream. 800 lavender plants and 100 blueberry bushes sit among fruit trees and a modern chicken coop. Beehives will be installed in 2013 to collect honey. Cream and milk are purchased from a single dairy farm in Washington state to ensure quality and reduce fossil fuel costs during transport. They bake nearly all of their ingredients that go into popular flavors such as gingerbread in their on-site kitchen. Solar panels are installed on their ice cream factory. A clean energy kiosk in the ice cream parlor in Maltby, WA educates customers about the benefits of green roofs, local farming and more.

Ice cream, along with chocolate, pizza, tacos, and margaritas are one of my most favorite guilty pleasures. As a child I loved anything oreo, or bubble gum and then there was cookie dough. Those are all good choices, well...maybe not the bubble gum. Have you tried that as an adult? Yikes. Now, I love to go for more interesting flavors. Green Tea, Ginger, and this French Lavender. Which is pretty amazing on it's own, but then you add thin chocolate cookies, a dark chocolate shell and a good pinch of flaky salt. It is basically a combination made for each other.


I recently had the great opportunity to work with the kind people from Snoqualmie Ice Cream. And if you haven't heard of them, go out now and buy a pint or 3. Because it simply is the best ice cream, ever. Rich, creamy and their flavors are creative without being too crazy.


These salted dark chocolate lavender ice cream sandwiches are simply perfect. Sweet, salty, crunchy and rich. Make a big batch and keep them in your freezer, because we all have one of those nights where you are desperately seeking for that certain something. These are it.


Every Summer we like to invite our friends over for an Ice Cream Social. It is the perfect party to host in the Summer because it is a simple party to put together. Based upon the decor, guest list and food offered, it can be as elaborate or laid back a party as you desire. Although we always host our Ice Cream Social in our backyard, the party could easily be held at a park, or inside if the weather does not cooperate. This year for our Ice Cream Social we served one of our favorite locally made ice creams- Snoqualmie Ice Cream.


In addition, to Snoqualmie ice cream we provided a toppings bar, homemade brownies and infused waters and Blueberry Lavender Lemonade for those guests. On the invitation, we encouraged our guests to bring along their favorite topping to share and as usual we were inundated with delicious accompaniments for our ice cream. Chocolate sauces, caramels, coconut, strawberries, raspberries, peanuts etc. we had just about any topping you could think of. As our guests arrived they were able to peruse the simple chalkboard menu I created with all the flavors listed. In my experience, it is best to give your guests plenty of time to look over the menu so when it is their time to order they have had plenty of time to decide.
